Try Greek Chicken Tacos for a Light Grilled Dinner

The weather is finally warming up in Oklahoma! This means it’s time to enjoy the sunshine with some of our favorite outdoor activities. We recently put together a new little recipe for Greek chicken tacos that was adapted from Southern Living Magazine and turned out fabulous! It’s light, delicious, and healthy!

Around the Anderson household, we love grilling and making meals with friends and neighbors! My husband does not love to cook, but he DOES love to grill….which is a great help with dinnertime in the spring and summer. That's why these Greek chicken tacos are great for the whole family. Hope you enjoy it as much as we do!

Ingredients:

  • 4 chicken breasts
  • 1/2 pint of grape tomatoes—quartered (we substituted a red bell pepper this time)
  • 1 avocado, diced
  • 1/2 cucumber, diced
  • 4 Pepperoncini salad peppers, chopped
  • 2 tsp. chopped parsley (we have also substituted with cilantro)
  • 2 tsp. fresh lemon juice
  • 2 tsp. olive oil
  • 1 garlic clove
  • 1 c. Feta cheese, crumbled
  • 1/2 tsp. Kosher salt
  • Whole wheat pita bread (or romaine lettuce leaves for a healthier option)

Preparation:

  • Season chicken as desired and grill! We have used chicken seasoning mixes or light Italian dressing as a baste.
  • Stir together grape tomatoes (or red bell pepper), avocado, cucumber, pepperoncini salad peppers, parsley, lemon juice, olive oil, garlic, and kosher salt.
  • Dice grilled chicken. Add to mix above.
  • Warm up pita bread and cut pieces in half
  • Stuff mixture in pita bread, sprinkle with feta and serve
