Buffalo Chicken Bake

This recipe is a great way to enjoy the flavors of buffalo chicken without the high-fat, high-calorie fried chicken. It's high in protein and low in carbs, making it a great meal option for those who have undergone weight loss surgery.

Ingredients:

  • 4 chicken breasts
  • 1 tsp each salt & pepper
  • 1 tbsp. Italian seasoning
  • 1 cup grated parmesan cheese
  • 1 cup Buffalo Wing sauce
  • 1 oz. reduced fat cheddar cheese, sliced

Instructions:

  1. Preheat oven to 350 F.
  2. Add chicken breast to a casserole dish. Season chicken with salt, pepper and Italian Seasoning. Pat on copious amounts of grated parmesan cheese until its nice and rubbed in.
  3. Add buffalo sauce over tops of chicken. Use the back of a spoon to spread the sauce all over. Bake for 25 minutes. Take out and top with light cheddar cheese and put back in for 5 more minutes. The internal temp of the chicken should be 165 F.
  4. Serve with roasted veggies and enjoy!!
